11/2 lbs. lean ground beef
salt and pepper
3 medium Oregon Russet potatoes, peeled & diced
1 small yellow onion, chopped
3 eggs, beaten
1 cup Oregon cottage cheese
1 cup Oregon sharp cheddar cheese, shredded
hot pepper sauce to taste
Preheat oven to 400°. Cook ground beef, diced potatoes and onions in a large skillet over medium heat for 1215 minutes, until beef is no longer pink and potatoes are partially cooked. Season with salt and pepper. Pour off drippings if necessary, then place in a greased 8 x 8 casserole. Combine eggs, cottage cheese, cheddar cheese and hot sauce; pour over potato-beef mixture. Bake at 400° for 45 minutes, until potatoes are soft and topping is browned. Serve with sour cream and chopped cilantro.
