Recipes: Mushroom Crust Quiche

4 Tablespoons butter
3/4 pound mushrooms, chopped
3/4 cup crushed Ritz-style crackers
2 cups shredded OREGON Monterey jack or cheddar cheese
1 cup OREGON cottage cheese
3 eggs
1/2 teaspoon chili pepper
1/4 teaspoon salt
3 green onions, chopped
Melt butter in frying pan, sauté mushrooms. Stir in crackers. Turn mixture into a 9 1/2 inch pie pan and press mixture evenly over bottom and up sides. Spread jack or cheddar cheese over mushroom crust. Mix cottage cheese, eggs and seasonings in a food processor or blender and pour into crust. Sprinkle top with onions. Bake in a 350°F oven for 25 minutes or until eggs are set. Let stand 10 minutes before serving.
