Recipes: Ham & Cheese Muffins

1/2 cup ham, finely chopped
1 cup all-purpose flour
1 Tablespoon baking powder
1/2 teaspoon baking soda
1/3 cup sugar
1 cup yellow cornmeal
1 large egg
2 Tablespoons OREGON sour cream
1 cup OREGON milk
1 cup shredded OREGON sharp cheddar cheese
Mix ham, flour, baking powder, baking soda, sugar and cornmeal in a bowl. Beat egg lightly with sour cream , milk and 3/4 cup cheddar cheese (reserve 1/4 cup). Add to mixture and blend just until combined. Fill greased muffin pans or muffin papers 2/3 full, sprinkle remaining cheddar cheese on top. Bake for 15-20 minutes in a 400°F oven, or until golden brown.
