12-14 ounces fish or fish fillets or steaks
1 cup milk
1 cup orange juice
1 medium carrot, shredded
1 teaspoon orange peel
1 tablespoons cornstarch
salt to taste
1 medium cucumber, unpeeled, chopped
To microwave, place fish in milk in dish, cover. Cook until fish has begun to turn opaque, about 6-8 minutes. Let stand covered for 2 minutes. Drain milk. In microwaveable bowl, mix remaining ingredients except cucumbers. Cook 2-3 minutes, stirring halfway through cooking time. After sauce thickens, add cucumbers. Pour sauce over cooked fish.
Serve with cooked spinach sprinkled with rice vinegar, garlic-parmesan French bread, and a glass of milk.
